If you saw my Food Philosophy post last week, you know the way I approach food is that meals should be healthy, simple, and take less than 20 minutes to make.
And these YUMster veggie tacos fit the bill! Lukas & I eat these all the time. You can also change up the ingredients with other veggies you have in your fridge… great huh?!
Yumster??! Oooh boy…
For these, all you will need is:
- Corn Tortillas
- Black Beans
- Red or Green Peppers
- Cowboy Caviar (I get mine at Trader Joe’s or you can make your own. Warning: it’s addicting!) OR other Salsa
- Sour Cream (optional)
First, heat up some olive oil in a pan, and fry your corn tortillas a minute or so on either side. I like mine still soft with a teeny crisp to them.
Next add your sour cream if you’re using it, and then black beans on top of that. Salt them a little.
Add avocado. Thinly slice your peppers.
Take the peppers away from your baby…
…And place on top of the beans. Add salsa or hot sauce to give it a little “mmmphh”. The raw sliced veggies give it a nice crispy bite!
